40 restaurants will offer a 100% Costa Rican gastronomic experience

A group of 40 restaurants from around the country will include four dishes made with local products in their menus, as part of the 2017 Gastronomic Laboratory, promoted by the Costa Rican Chamber of Restaurants and Related Products (CaCORE) and Fundecooperación for Sustainable Development.

The event is developed under the National Plan for Sustainable and Healthy Costa Rican Gastronomy (PNGCSS), and aims to encourage the development of new, creative and balanced recipes using local ingredients and native edible plants of Costa Rica; thus promoting national gastronomy and elevating it to haute cuisine spheres.

As part of our commitment to promote a sustainable cuisine, this year we decided to incorporate ingredients with better adaptation to climate change, for which we seek to create productive linkages between restaurants and small and medium producers of these local foods,”

said Silvia Durán, representing CACORE.

Kattia Rojas, spokeswoman of Fundecooperación, explained that to achieve these linkages, had the task of developing a list of SMEs producing native foods more adapted to climate change (ie foods that occur both with rainy season or drought), which will serve as a guide for suppliers to participating chefs.

Anona, cocoa, medlar, hearts of palm, chicasquil, cuajiniquil, cas, the flower of itabo, guaba machete and güízaro are some of the native products available to participants for the preparation of dishes.

And, those that have a better adaptation to climate change are, for example: kale, chia, chard, eggplant, tree tomato, cape gooseberry, yams, sorghum, criollo corn, jicama, sweet potato, sweet pepper, among others.
