36 national restaurants started gastronomic laboratories

From August 30th, 36 restaurants in Costa Rica are part of a series of gastronomic laboratories, which will include recipes and local products.

The objective of the Costa Rican Chamber of Restaurants is to develop the inclusion of gastronomy as a tourist product and to promote it as part of a true, national, culinary experience. To reach its goal, the Chamber will have the support of the Costa Rican Tourism Institute (ICT).

According to Alberto López, manager of ICT, the potential of the national gastronomy, as an important part of the tourist heritage, motivates them to join forces in order to stimulate culinary innovation.

62 establishments, located in different parts of the country, will also be part of this iniciative. They aim to strengthen and promote innovative cuisine with Costa Rican identity.

Chefs and owners of the participating restaurants gathered to learn and develop important details that need to be taken into account such as preparation, description of the recipe, ingredients and number of portions to further standardize the evaluation.
